​​Inspired by potato black bean taquitos that I have eaten at a restaurant in the Bay Area, These Potato Black Bean Taquito Burgers are insanely delicious! The cojita cheese provides the right level of saltiness in the bun along with the hatch chiles and chipotle powder which provides the perfect spice in it. The best burger treat on a summer day!

My inspiration for the Potato Black Bean Taquito Burgers

There is a restaurant in the Bay Area called Sun of Wolf, located in Palo Alto, which has these amazing taquitos, filled with a potato filling, laden with poblano pepper strips and some spices, along with cheese. They are absolutely delicious and inspired me with the flavors of this burger.

Summer is a really good time to grill up those burgers with your favorite toppings. Leftover burger patties make a fantastic lunch for the day after. I love a good vegetarian burger, and I am always on the look out for good patties.

My favorite burger joint in the Bay Area

My favorite burger joint has to be Roam Artisan Burgers in the Bay Area. We have been going there since its conception many years ago. I love the vegetarian patty, which has quinoa, black beans and beet in it, which is my absolute favorite combo for a burger patty. They have various varieties of burgers, for example my favorite is the Tejano Burger, which has actual corn strips, avocado, grilled onions as toppings, making it a very tasty and hearty burger.

Ingredients for the Potato Black Bean Taquito Burgers

The ingredients for the Potato Black Bean Taquito Burgers are:

  • Potatoes: I use white potatoes for this recipe. I cut them into small chunks
  • Can of black beans: the 15.5 ounces of black bean is perfect for this recipe. I drain the water completely using a sieve, and wash the beans under water as well.
  • Red onion: Finely chopped red onion always in a burger. 
  • Cotija cheese: Cotija cheese is a Mexican crumbly cheese which adds a wonderful salty flavor to the patty.
  • Can of hatch chiles: I love using hatch chiles this time of the year. It adds that freshness to the patty, along with a slight zing. I drain out the water from the can using a sieve, so that the patty does not get soggy.
  • Panko bread crumbs: I use Japanese Panko bread crumbs in this recipe, but feel free to use normal bread crumbs.
  • Cilantro
  • Salt
  • Chipotle powder: Chipotle powder tastes really good in this patty, and you can find it easily at grocery stores now.
  • Garlic powder

How to make the Potato Black Bean Taquito Patty?

The potato black bean taquito patty is really simple. The mixture is made with boiled potatoes, canned beans and canned hatch chiles, both of which need to be drained through a sieve. I wash the black beans but not the hatch chiles (you don’t want to wash away the flavor!). Red onions, panko bread crumbs, cilantro, spices like chipotle powder and garlic powder, and salt are added.

I also add cojita cheese which is a Mexican crumbly cheese which adds a wonderful salty flavor to the patty. It is available at Trader Joe’s. You can also find it at Whole Foods or at your local grocery store. Mix it all together with your hands until absolutely cohesive. Make patties using an ice cream scoop. I use 2 ice cream scoops to form one patty. This ensures that the patties are the same size. You get about 6 patties from this mixture.

TIPS: 

  1. To boil the potatoes, I peel them, and cut them into large chunks, and then place it into the water in a saucepan, at a high temperature on the stove. The potatoes are cooked within 15 minutes. Be sure to test with a fork for doneness.
  2. Use gloves to mash the mixture together and form the patties. I personally do not like a messy process, so I use gloves and trust me, it makes the process so much easier.

Once the patties are formed, grill them on a grill pan, for a few minutes on either side. Add cheese to one side (of your choice), and cover with a lid to melt the cheese for a few seconds before setting it aside.

Use the same pan to grill the onions.

How do you make the Chipotle Mayo?

The chipotle mayo is made with Kewpie mayo which is an obsession. The mayo is a Japanese mayo that is creamier than regular mayo. You get it at Asian grocery stores, or you can find it online as well. I mix the mayo with lime juice and Chipotle in Adobo Sauce, using one chipotle pepper and some of the adobo sauce. This mixture is SO good, and goes perfectly well in this burger.

Toppings for the Potato Black Bean Taquito Burger

I have used tomatoes, butter lettuce leaves, and grilled onions as my toppings of choice, along with this Corn and Peach Salsa, that is TO DIE FOR!

To grill the onions, use the same grill pan. Spray it with cooking spray or avocado oil spray. Add the thinly sliced onions, and grill them on medium-high heat, for about 2-3 minutes. Turn them around, and cook for another 2-3 minutes. You should see light charring on the onions. Once they are charred, the onions are done.

The leftover patties can be stored in an airtight container, in the fridge for upto 2-3 days.

Pacifico or Corona are both light beers and will go great with these hearty burgers.

Chipotle Mayo

  • ¾ cup kewpie mayo or regular mayo
  • 1 chipotle chilli in adobo sauce, finely chopped
  • 2 teaspoons adobo sauce 

Potato Black Bean Taquito Patty

  • 450 grams white potatoes, boiled, peeled and mashed
  • 15 ounces, can of black beans, drained and rinsed
  • ½ cup red onion, finely diced
  • 5 ounces cotija cheese, fully crumbled
  • 1 can hatch chiles, drained
  • 1 cup panko bread crumbs
  • ½ cup cilantro, finely chopped
  • 1 ½ teaspoons table salt
  • 1 ¾ teaspoon chipotle powder
  • 1 ½ teaspoon garlic powder
  • Avocado oil spray or vegetable oil

Fixins

  • 6 cheese slices (Cheddar or Pepper Jack)
  • 2 tomatoes, thinly sliced
  • Butter lettuce leaves
  • Avocado oil spray or 1 tablespoon of vegetable oil
  • 1 medium red onion, thinly sliced horizontally, or you can grill them
  • 6 sesame burger buns

Method

Potato Black Bean Taquito Patty

  1. In a large bowl,add the mashed potatoes, beans, red onion, cotija cheese, hatch chiles, panko bread crumbs, cilantro, salt, chipotle powder and garlic powder and mash the entire mixture until the beans are semi-mashed. 
  2. Divide into 6 portions and shape them into patties or discs, about ⅓ inch less in circumference than the burger bun. You can also use an ice cream scoop and scoop out 2 generous scoops for each portion.
  3. In a large saucepan, on medium high heat, spray avocado oil spray or add about a tablespoon of oil. After 30 seconds, place 3 patties in the pan, and cook for about 3 to 4 minutes. 
  4. Using a spatula, flip them over. Cook for 2 minutes. Add a cheese slice on each patty. Cover the pan with a lid to melt the cheese, about a minute. Remove the patties onto a plate.
  5. Repeat for the remaining patties.

Chipotle Mayo

  1. In a small bowl, add all the ingredients and mix until well combined. Set aside.

Fixins

  1. Grill the buns on a grill pan for about 1 ½ to 2 minutes, on medium high heat, to get charred marks.
  2. In the same grill pan, spray avocado oil spray or drizzle about 1 tablespoon of vegetable oil. 
  3. Lay the sliced red onions flat on the grill pan and cook for about a minute. Flip them over and cook for another minute. Set them aside.

Assembly

  1. Place the base of the bun upside down with the grill marks visible.
  2. Smear the chipotle mayo on top of this bun. Place a butter lettuce leaf on top.
  3. Next place a patty on the top, followed by 2 tomato slices, and a bit of grilled onions. 
  4. Cover with the top part of the bun. 
  5. Assemble the rest of the burgers.
  6. Enjoy with some salt and vinegar chips, and a chilled glass of beer!
