Masala Doodh (Milk) Marbled Cookies

​​The cookie is an ode to the quintessential drink Masala Doodh, that is made with milk, a nut and spice mixture and sugar. The drink is typically served warm during the winter months. The cookie contains the masala mixture and is heavenly. I give it a decorative element of marbling, with simply icing sugar, which makes it festive and ready for any occasion.

It is cookie season and perhaps my favorite season of the year! I have enjoyed coming up with different cookies every year, baking them and sharing them with my loved ones. Such a treat! Yes, a lot of butter, sugar, flour and eggs are consumed this time of the year. But hey, it is the time to give and spread joy and love!

Inspiration for the Masala Doodh Marbled Cookies

I had developed this recipe for the Bake for Scratch Holiday Cookie Magazine in 2022, and I was thrilled how good they turned out and how delicious they tasted.

Masala Doodh is a drink that I grew up with. As a kid and also in my teens, my mother would make a hot beverage to drink at night, and it usually contained a mixture of ground nuts such as almonds, cashews, pistachios and spices such as cardamom, nutmeg, and a bit of saffron.

The milk is boiled with the nut and spice mixture, along with a sweetener such as sugar or you could use honey, and then consumed while it is still warm. It is a fantastic drink, and is said to provide energy due to the nuts and the milk. Let’s not talk about the sugar that is in the drink. In all fairness, it was one of my favorite beverages growing up. We did not have Starbucks at that time!

Ingredients for the Masala Doodh spice mixture

The spice mixture ingredient list for Masala Doodh (or Masala Milk) is as follows:

  • Nuts like almonds, pistachios, and cashews. They should be raw and not toasted
  • Spices like cardamom, nutmeg and saffron, which provide warmth and floral notes to the beverage

Ingredients for the Masala Doodh Marbled Cookies

The ingredients are:

  • All purpose flour
  • Salt
  • Baking powder
  • Masala Doodh spice mixture
  • Unsalted butter at room temperature
  • Granulated sugar
  • Vanilla extract or vanilla bean paste
  • Egg

The cookies are pretty straightforward to make. You can use any shape you fancy.

Tips and tricks on how to Marble the cookies?

  1. The mixture for the icing is powdered sugar and water mixed until it is a nice even flowy yet thick consistency. Consistency is important. You do not want it to be thin else it will not adhere well to the cookie. You do not want it to be thick, else it will be way too sweet and thick on top of the cookie.
  2. Once the icing is ready, add not more than 3 colors. Use toothpicks for stirring the color into the icing mixture. Do not over mix. You want that rippling effect in the icing, so that it shows up onto the cookie.
  3. Invert the cookie and dip it straight down into the bowl of icing mixture. Stay there for 2 seconds, and then pick it up gently.
  4. Shake off the excess icing, aka let it drip off, and then let it dry onto a baking pan or a wiring rack.
  5. You HAVE to let it dry out for atleast 2 hours, else you will not be able to store it in a container, one on top of the other. It will stick.

Another decorative tip:

Use edible gold paint and a brush to spray the paint onto the cookie for that fun and elegant effect. I love it, and it makes it a little bit extra. Who does not like it extra?

Are these cookies shippable and how long do they last?

These cookies are absolutely shippable, and last for about 2 weeks as well in an airtight container. They are fantastic with Masala Chai and it is one of my favorite combinations!

(Makes ~70 cookies)

Ingredients:

Masala Doodh spice mixture:

Makes 1 12 oz bottle

  • ½ cup (70 gms) raw unsalted almonds
  • ½ cup (70 gms) raw unsalted cashews
  • 1/2 cup (70 gms) raw unsalted pistachios
  • 8 cardamom pods
  • 1 teaspoon freshly grated nutmeg
  • 1 heaped teaspoon saffron

Marbled Cookies:

  • 3 cups (390g) all purpose flour
  • ⅔ cup (80g) doodh masala
  • ¼ tsp baking powder
  • ½ tsp salt
  • 1 cup (226g; 2 sticks) unsalted butter, at room temperature
  • 1 ¼ cup (250g) granulated sugar
  • 1 egg
  • 2 tsp vanilla extract
  • Additional flour for rolling and cutting the cookies
  • 2 inch fluted or round cutter

Marble Decoration:

  • 3 cups (390g) confectioner’s sugar
  • About 7 tbsp warm water
  • Americolor gel Fuschia / Orange
  • Americolor Gold
  • Toothpicks
  • Paint brush used for edible art

Method:

Masala Doodh spice mixture:

  1. Grind all the ingredients in a high speed blender until fine. Remove contents into a bottle and store for upto 6 months.

Marbled Cookies:

  1. In a medium bowl, combine the flour, doodh masala, baking powder, and salt. Whisk to combine.
  2. In the bowl of a stand mixer, with a paddle attachment, add the butter and granulated sugar. Start mixing on slow, gradually increasing the speed to high. Mix until it is light and fluffy for about 2 minutes. It should be a pale yellow in color.
  3. Add the egg and vanilla extract, whisk to combine.
  4. Using a rubber spatula, clean the sides of the bowl, and bring the butter mixture into the middle of the bowl.
  5. Add the flour mixture in 2 additions, and whisk until combined. Mix until just combined.
  6. Divide the dough into 2 parts, onto 2 plastic wraps. Wrap tightly and combine to form a disc. (Each disc should weigh about 495 grams). Let rest in the fridge for 2 hours.
  7. Preheat the oven to 350 degrees.
  8. Place 2 baking sheets with parchment paper on the side.
  9. Sprinkle flour on a clean work surface. Remove the dough from the plastic wrap. Put additional flour on top of the dough and start rolling it into about a ¼ inch disc. Using the cutter or any cutter of your choice, dip it in the excess flour and start cutting out shapes. Collect the leftover dough, combine, use additional flour to aid with rolling out the dough and repeat the process of cutting out more cookies, until no dough is left.
  10. Place the shapes on the parchment paper, on the baking sheet. You may need an additional baking sheet. I usually put about 12 to 14 cookies on one baking sheet.
  11. Put one tray at a time in the bottom rack for about 12 to 13 minutes in total, or until golden brown around the edges.
  12. At the halfway mark, turn the tray to brown all the cookies evenly.
  13. Remove the trays after 12 to 13 minutes and let cool for 5 minutes. Place them on a wire rack to cool completely.
  14. Repeat the process for the second disc of the dough steps 9 – 13.

Marble Decoration:

  1. In a medium bowl, add the confectioner’s sugar and 6 tablespoons of water. Whisk until well combined and no sugar lumps are found. Ensure that the consistency is slightly thinner than glue. It should not be thick and not thin as well. If it is thick add a teaspoon of water at a time, upto 2 teaspoons of water, to thin it out slightly. If it is too thin, add ¼ cup of additional confectioner’s sugar at a time until it is the right consistency.
  2. Using a separate toothpick for both the pink and the orange, add a smidge of pink, and a smidge of orange. Using a toothpick, make swirls in the sugar mixture to form a nice pattern. Do not overdo it.
  3. Take a cookie, dip it upside down, straight onto the mixture. Drain off excess by gently nudging the cookie up and down, on top of the bowl to let the excess drop back into the bowl.
  4. Place the cookie onto the wire rack. Repeat for the remaining cookies.
  5. Let all cookies completely dry for about an hour.
  6. Take about 2 to 4 drops of the gold color, in a small bowl. Using the paint brush, dip it into the gold, flick with a finger of the other hand, onto each cookie to make droplets on each cookie for a pretty festive look.
  7. Repeat for all the cookies! Let dry completely for about an hour.

Storage:

  1. Store the cookies in an airtight container, for upto 2 weeks.
  2. The unbaked cookie dough can be kept in the fridge for upto a week. Remove it about half an hour before baking to soften slightly, so it is easy to roll it out.
  3. You can even bake off each disc on separate days.
