Dubai Chocolate is a phenomenon as I like to call it, a craze that has gone viral. Dubai chocolate is heavily trending and has become popular all over the world. Dubai Chocolate originated by a chocolatier in Dubai called Fix Dessert Chocolatier. The confection was made as a craving for the owner who was pregnant at that time.


What is Dubai Chocolate?
Dubai Chocolate is made with a filling of kadaif, which is essentially shredded phyllo dough, popular in Middle Eastern desserts and pistachio cream, encased in a chocolate covering. The filling is sweet, crunchy, nutty and oh so good and goes perfect with the chocolate.

What is the difference between pistachio cream and pistachio butter?
Pistachio cream is a sweetened paste made with pistachios, sugar and oil, that is used to make desserts. Pistachio butter is simply raw pistachios that are blended to a paste and enjoyed on toasts.
How did I come up with the idea of Dubai Chocolate Roasted Strawberry Ice Cream Sandwiches?
Over the spring I had come up with a recipe for Dubai Chocolate Trifle with Strawberries for S.F.Chronicle, which were absolutely fantastic! I thought – why not create an ice cream flavor with roasted strawberries (which btw taste amazing as a topping over ice cream!), and sandwich that between pistachio kadaif and chocolate coated cookie layer?
The idea resounded, and I made this recipe a couple of times. First with a mixture of pistachio and roasted strawberry ice cream. The verdict from the family was O.K, and they did not like the pistachio ice cream sandwiched between the cookie layers. So I made it a roasted strawberry ice cream only, and this rendition was amazing!!!!

1. Ingredients of the cookie layer of the Dubai Chocolate Roasted Strawberry Ice Cream Sandwiches
The ingredients of the Dubai Chocolate Roasted Strawberry Ice Cream Sandwiches are:
- All purpose flour
- Baking soda
- Salt
- Unsalted butter
- Granulated sugar
- Brown sugar: makes the cookie layer chewy
- Whole milk
- Vanilla extract
This eggless cookie layer is super easy to make. All the ingredients are mixed in a mixing bowl, no stand mixer required! The cookie layers are evenly distributed between two 8×8 baking pans that are lined with baking spray and parchment paper with an overhang so that it is easy to remove it from the baking pan. You do need 2 baking pans to make the process easier.

2. What are the ingredients for the Roasted Strawberry Ice cream?
The ingredients of the eggless Roasted Strawberry Ice cream are:
- Strawberries
- Granulated sugar
- Heavy cream
- Condensed milk
- Vanilla extract
- salt
The ice cream layer is eggless as well and is not custard based. The ice cream is a no-churn ice cream where an ice cream maker is NOT required. You can whip up the whipped cream in a stand mixer or use a hand mixer to whip it up. Add condensed milk to it, and along with the roasted strawberries that become jammy in the oven, along with vanilla extract and salt.
The ice cream is decadent, yet light and so so tasty with the roasted strawberries. I could eat that ice cream by itself!

The ingredients for the kadaif layer Or the Dubai Chocolate part of the Dubai Chocolate Twix Bars are:
- Unsalted butter
- Kadaif
- Pistachio cream
How to make the kadaif layer Or the Dubai Chocolate part of the Dubai Chocolate Roasted Strawberry Ice Cream Sandwiches?
The kadaif layer is very easy. You want to simply melt the butter in a skillet on medium heat. Then add the kadaif and saute until it is golden brown in color. You have to saute it continuously so that it does not burn, since it is very fine in texture.
Once cooled, combine with the pistachio cream and then set it aside.

Where can I purchase kadaif from?
Kadaif is finely shredded phyllo dough that is used in many Middle Eastern desserts. You can find it here at Amazon or find it at any Middle Eastern store.
Where can I purchase pistachio cream from?
Pistachio cream can be found at Amazon linked here, and is a good price for the amount of the cream. This one is from Sicily. It is a 21 ounce jar that can be used to make many different kinds of desserts.
Where do I get freeze-dried raspberry powder from?
You can find freeze-dried strawberries at Trader Joes that can be blitzed in a high speed blender. OR you can find the free-dried raspberry at Amazon linked here. Trader Joe’s option is more economical.

Final Assembly
The final assembly is the fun part! In one of the baking pans, remove the cookie layer and place a plastic wrap with an overhang on both sides. Repeat with another long plastic wrap on the other two sides to have an overhang. Add the cookie layer. I add half of the melted chocolate in it first and layer it evenly using an offset spatula all over the cookie layer. Next I add half of the pistachio kadaif over the chocolate layer.
Next we add the roasted strawberry ice cream and even it out with the offset spatula. Offset spatula is your best friend here!
We repeat the layers in the reverse order by adding the pistachio kadaif, layering it evenly. Then we add the remaining chocolate over the cookie layer, spread it evenly and then invert it on top of the kadaif and seal the mixture. Cover with the plastic wrap and secure it. Place it in the freezer until set for a few hours.
Then we remove the whole bar onto a cutting board, and using a serrated knife, cut the bar into 12 equal pieces. Place them on a baking sheet lined with parchment paper. Cover with a plastic wrap until you are ready to decorate.
Decoration is an option step. You can simply eat the ice cream sandwiches now, or if you want to jazz them up, you can dip it in chocolate, shaking off any excess, and then covering in pistachio dust or strawberry dust.
Place them in an airtight container and set in the freezer and enjoy it within the course of a month!

Dubai Chocolate Roasted Strawberry Ice Cream Sandwiches
Ingredients
Roasted Strawberries
- 12 ounces strawberries
- 3 tablespoons granulated sugar
No-Churn Ice Cream Base
- 1 ½ cups heavy cream
- 1 can (14 ounces) condensed milk
- 2 teaspoons vanilla extract
- ¼ teaspoon table salt
Cookie layers
- 1 ¾ cups (235 grams) all purpose flour
- ¼ teaspoon baking soda
- 12 teaspoon table salt
- 1 stick (113 grams) unsalted butter, softened
- 2 tablespoons (25 grams) granulated sugar
- ⅓ cup light brown sugar, packed
- 1 ½ teaspoon vanilla extract
- ⅓ cup whole milk, at room temperature.
Pistachio Kadaif
- 4 tablespoons unsalted butter
- 4 cups kadaif
- ¾ cup sweetened pistachio butter
Chocolate layer
- 10 ounces semi-sweet chocolate
- 2 tablespoons coconut oil
Decoration (optional)
- 10 ounces semi-sweet chocolate
- 2 tablespoons coconut oil
- ¾ cup finely ground pistachios
- ¾ cup Freeze dried strawberry powder
Method
Roasted Strawberries
- Preheat the oven to 400 degrees F.
- In a quarter tray, add the strawberries, and sugar. Mix with a rubber spatula to combine.
- Put the tray in the oven for a total of 25 minutes, stirring halfway through.
- Remove from the oven, and let it completely cool.
- Store in a container and in the fridge overnight.
No-Churn Ice Cream Base
- In the bowl of a stand mixer with a whisk attachment, add the cold heavy cream. Whisk at high for about 1 ½ minutes until loose peaks form.
- Add the condensed milk, vanilla extract and salt and whisk until well combined, about a minute.
- Remove the ice cream base into a large bowl.
- Add the roasted strawberries into the bowl. Mix until just combined.
- Place the covered bowl in the freezer for about 2 hours.
Cookie layers
- Preheat the oven to 350 degrees. Prepare two 8×8 baking pans, by spraying them with cooking spray and adding parchment paper at the bottom.
- In a small bowl, add the flour, baking soda and salt. Whisk to combine.
- In another medium bowl, add the softened butter, and sugars and using a rubber spatula, mix until well combined. Then whip the mixture vigorously until it turns a pale color, about 2 minutes.
- Add the vanilla extract and whole milk and mix well to combine.
- Now add the flour mixture and using a rubber spatula, mix until just combined.
- Divide the mixture into both the baking pans, and flatten it with a rubber spatula to reach all the corners and edges of the baking pan. You want a flat layer. Use the palm of your hands to flatten the mixture as well.
- Bake in the oven for 13 minutes and until light brown in color. Remove from the oven and cool completely.
- Set the baking pans in the freezer for 15 minutes.
Pistachio Kadaif
- In a medium skillet, on medium heat, add butter. Once melted, add the kadaif and saute occasionally for about 4 to 5 minutes, until light golden brown in color. Do not leave it unattended, else it will burn.
- Add the kadaif into a medium bowl. Add the pistachio butter and mix until well combined.
Assembly
- Melt the chocolate and the coconut oil in a microwaveable container in increments of 30 seconds, three times. Mix the chocolate after every 30 seconds. Once the chocolate is melted, set it aside.
- Set the strawberry ice cream, cookie bases, and pistachio kadaif ready on the counter.
- Remove the cookie bases from the baking pans and set aside.
- In one of the baking pans, place a plastic wrap with an overhang on both sides. Repeat with another long plastic wrap on the other two sides to have an overhang.
- Place a cookie base in one of the pans.
- Add half of the melted chocolate and spread it evenly over the cookie layer with an offset spatula.
- Add half the kadaif mixture and layer it with an offset spatula, making sure it reaches all the corners and sides of the pan.
- Using an ice cream scoop, add the strawberry ice cream evenly over the kadaif layer. Smoothen it out with an offset spatula.
- Add the remaining pistachio kadaif on top and smoothen into a flat layer with an offset spatula.
- Spread the remaining chocolate over the cookie base, using the offset spatula.
- Invert the cookie base over the kadaif layer, press it gently and using the plastic wraps, tightly wrap the entire ice cream bar.
- Set in the freezer overnight.
Chocolate Layer
- In a medium bowl, add 8 ounces of chocolate, along with the coconut oil and microwave in 30 second increments, three times, mixing after each interval with a rubber spatula.
- Next add the remaining 2 ounces of chocolate and mix until you get a smooth mixture. This is tempering the chocolate to get a smooth shiny finish.
Final Assembly
- Remove the pan from the freezer, invert it onto a wooden surface(cutting board), and lightly bang it to release the plastic wrap from the baking pan.
- Remove the wrap.
- Using a sharp knife, smoothen out the edges of the entire ice cream sandwich.
- Cut the bar into 12 equal pieces.
- I cut it horizontally into 3 and then vertically into 4 to give 12 bars.
- Place them on a baking sheet lined with parchment paper, and into the freezer for 10 minutes.
Decoration (optional)
- Have the melted chocolate ready in a tall glass that can fit the ice cream sandwich.
- Remove the baking pan with the ice cream sandwiches.
- Dip each bar horizontally into the chocolate, about 1 inch into the chocolate, shake off the excess chocolate. Dip in the pistachio or strawberry powder to cover the chocolate layer partially.
- Place it back onto the baking pan.
- Repeat for the remaining sandwiches.
- Place in the freezer for 10 minutes to set.
- Store in an airtight container, and place in the freezer until ready to eat!
