Corn and Peach Salsa

​​This delicious salsa uses the in-season corn and sweet, juicy, tart peaches, along with spiciness from jalapenos, citrus lime flavor and slight creaminess from kewpie mayo. This makes for a perfect summer day appetizer. Bet it will not last for long!

One of my favorite combinations of the summer is corn and sweet yellow peaches. I use this combination in salads, a corn ice cream with a peach compote, and this absolutely addictive Corn and Peach Salsa.

I go crazy at the farmers market in the summer. All the produce makes me want to buy it all and cook like a maniac, and there is just not enough time to get through all the recipes that I want to create in my kitchen. So it gets punted to the following year.

Different ways to eat this Corn and Peach Salsa

One of the quickest meals that I prepare in the summer are quesadillas, with different veggie options inside, along with beans and cheese, ofcourse for the protein content. With the quesadillas, this Corn and Peach Salsa is an absolutely delicious add-on. 

The Corn and Peach Salsa is a fantastic appetizer that would be gone in minutes at any party. 

This salsa is also stellar on these Potato and Bean Taquito Burgers that have become super popular in our home, and it is on the request list ever so often.

Ingredients of the Corn and Peach Salsa

The ingredients of the Corn and Peach Salsa are:

  • Ears of corn: I generally find white corn sweeter than yellow corn, but that is a wrong notion. The sweetness depends upon the genetics and maturity of harvest.
  • Yellow peaches: I prefer yellow peaches to white in this recipe, because yellow peaches are sweet yet tart, which makes this salsa so good.
  • Red onion
  • Jalapenos: If you do not want your salsa to be spicy, deseed the jalapeno.
  • Cilantro
  • Lime juice
  • Kewpie Mayonnaise: Kewpie Mayo is a Japanese mayo that is creamier and slightly sweeter than the regular mayonnaise. It is readily available online or in Asian grocery stores.
  • Maldon sea salt: I am obsessed with this sea salt and trust me you want this in your home. Use it for your guacamoles, salsas, salads, it is fantastic! 
  • Coarsely ground black pepper

How do I make this Corn and Peach Salsa?

The key to a good raw salsa is to cut all the ingredients equally small. Meaning the peaches, onion, jalapenos should all be the same size as the corn. It is the SECRET to a good salsa.

This salsa is a 5 minute recipe. Put all the ingredients into a large bowl, and simply mix it until well combined. Serve with crispy tortilla chips. 

Another valuable TIP: GET THIS LIME JUICER!!! You need a lime juicer in your kitchen. Limes are typically hard to juice, and my life became so much easier once I got a lime juicer. From guacamoles, to salsas, to limeades, this truly squeezes out so much juice.

Corn and Peach Salsa

Ingredients

  • 2 ears of corn, shucked
  • 2 yellow peaches, finely diced
  • ½ medium red onion, finely diced
  • 1 jalapeno, finely diced (remove seeds if you don’t want it spicy)
  • ½ cup cilantro, finely chopped
  • Juice of 1 lime
  • 2 tablespoons of Kewpie mayo or regular mayo
  • 2 teaspoons Maldon sea salt
  • 1 teaspoon coarsely ground black pepper

Method

  1. Grill the ears of corn on an outdoor grill on high heat, turning them every 30 to 40 seconds until they’re medium charred. Alternatively, you can char the ears directly on a gas stove on high heat; broil them in the oven; or cook oiled ears on a grill pan on the stove. Regardless of the method, turn them frequently and stop when you’re happy with the level of char.
  2. In a large bowl, add all the ingredients and mix until well combined.
  3. Serve with tortilla chips.
  4. Any remaining salsa can be kept in an airtight container in the fridge for upto a day.
