Sweet Treat #5: Rose Marshmallow Masala Chai Cookies

Rebecca of www.displacedhousewife.com and I are sharing 12 days sweet treats with YOU all! She is making 6 treats and so am I, so you can make these cookies/treats for your loved ones and make your own little cookie boxes!  Today she is sharing her Dark Chocolate Peppermint Cups! Aren’t they so cute!? I love that you can make them in an hour! They would be excellent to take to a holiday party! or to give as gifts!

My 5th Sweet Treat actually came about while going through some food magazines a few weeks ago! I was going through the Bon Appetit Dec 2016 Magazine! I have several old magazines of Martha Stewart, Domino Mag, Bon Appetit, Gourmet to name a few and it is always fun to go through them to get inspiration. I love collecting them, occasionally going through them and seeing how the food photos are shot, and the focus in the shots. There is always minimal propping. There was so much emphasis on propping a couple of years ago, but that has changed a lot, and minimalism is the way to go.

So there was this very pretty Marshmallow Cookie that I saw in the magazine, where the base is a shortbread cookie, with marshmallow fluff on the top, covered with dark chocolate! I adapted the recipe from the magazine, to create this adorable Masala Chai Cookie with a Rose Marshmallow and covered in White Chocolate and sprinkles! I got the idea from a Rose Chai Latte that I had when I was in India in 2018, and it was fragrant, floral, and so delicious! So using that as my inspiration, I translated the flavors to this petit bite size cookie!

The base is a shortbread crust with black tea and chai spice flavors like ground ginger, cardamom, clove, black pepper, cinnamon and a bit of nutmeg. The cookie bakes up pretty fast, but you have to chill the rolled dough before proceeding to bake. I used a 1 inch pastry tip(the opening of a pastry tip) as my cutter. Or you could use a 1 ½ inch cutter too to make slightly bigger cookies which may be better to make it more time efficient. The marshmallow is a recipe that I have on my blog, and I used rose water to flavor the marshmallow. I also used gelatin to set it better. Once the cookie is set and the marshmallow is pipped onto each cookie, you take melted white chocolate, and drizzle a bit over each cookie to cover the entire cookie, and decorate with pretty sprinkles!

The cookie has so much flavor, and would make a perfect little cookie for gifting this holiday season! You actually get extra marshmallow leftover after pipping it on to the cookies, so you can actually layer it in a baking pan, greased and covered with powdered sugar, and make marshmallow cubes for gifting as well. I have outlined the process in the recipe.
