Rainbow Margarita/Agua Fresca Popsicles

Summer is here and it is #popsicleweek yet again! Every year Billy Green of Wit and Vinegar organizes Popsicle Week, which includes bloggers from around the world, coming up with unique combinations of popsicles which are fun to see and make from all the varieties, and beat the heat with! This is my first year participating and I could not be more excited! I was thinking what to make, I had a couple of ideas, but then June is Pride Month too, and I am all about rainbows, especially cause of my dear daughter, who once upon a time drew only rainbows! I have countless rainbow pictures/drawings/paintings of hers in the house ! 🙂 So in lieu of Pride Month, for some of my dear friends and my dear daughter loving rainbows, I decided to make Rainbow Popsicles!

I came up with Rainbow Margarita Popsicles for us and Agua Fresca Popsicles for the kids ! I created 5 flavors for the following colors: red, orange, yellow, green, purple/magenta. The red layer was created with raspberries and hibiscus. The orange layer was orange juice. The yellow layer was peaches and mangoes. The green layer was kiwi and cilantro. The purple layer was blackberries and lavender. If you know me, from my previous blog posts and my instagram posts, I love creating flavors with herbs and dried flowers, and spices! They give so much flavor and depth to any treat and elevate it to the next level!

Each layer makes 2 popsicles : one agua fresca popsicle and one margarita popsicle. I add 1 oz tequila to the margarita popsicle! My kids helped me make the mixture, and we had so much fun playing with the different layers! Each layer has fruit puree, lime juice, agave nectar and water, and ofcourse tequila for the adult pops! These popsicles are gluten free, refined sugar free and dairy free, making them so good for you to eat any time!  They were super easy to make as well, and did not take time at all!

Rainbow Margarita/Agua Fresca Popsic

Ingredients

  • Each layer makes 2 popsicles : 1 agua fresca popsicle and 1 margarita popsicle
  • Red Layer:
  • 3/4 raspberries
  • 1 tsp hibiscus in 1 tbsp warm water(for 10 min)
  • 1 oz agave nectar
  • 1 oz lime juice
  • 3 oz water
  • Orange Layer:
  • Juice of 2 oranges
  • 1 oz lime juice
  • 1 oz agave nectar
  • 2 tsp raspberry mix(from above - to give it a bright orange color)
  • Yellow Layer:
  • 3/4 cup mix of mango and yellow peach pieces
  • 1 oz lime juice
  • 1 oz agave nectar
  • 3 oz water
  • Green Layer:
  • 2 kiwis(skin peeled)
  • 1 tbsp cilantro
  • 1 oz lime juice
  • 1 oz agave nectar
  • 3 oz water
  • Purple/Magenta Layer:
  • 3/4 blackberries
  • 1/2 tsp lavender extract or 1/2 tsp dried lavender flowers
  • 2-3 tbsp raspberry mix from the above mixture
  • 1 oz lime juice
  • 1 oz agave nectar
  • 3 oz water
  • For the Margarita popsicles:
  • 5 oz tequilla (add 1 oz for each popsicle)

Instructions

  1. For each layer, blend all the ingredients in a chopper/grinder and pour it in 5 different bowls.
  2. For the purple mixture, add in 2-3 tbsp of the raspberry mixture to give it a pretty magenta color. If you do not wish to, you can just keep the mixture with blackberries only.
  3. Pour each color mixture, one at a time into a pourable bowl. Add in half of the mixture to one popsicle mold. To the remaining mixture, add in 1 oz of the tequila and mix with a spoon. Now pour this mixture into the other popsicle mold.
  4. Continue the same process with the other 4 colors. You may have a little bit of each color mixture remaining.
  5. Now store the popsicle mold in the freezer for 3 hours. They are ready to eat!
